<span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">I love okra - so I found this recipe and tried it out and it was really good! It makes a great side!</span><br />
<h2 style="color: #553c13; font-family: 'Comic Sans MS'; text-align: left;">
Ingredients</h2>
<ul style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
<li class="ingredient">4 slices bacon, diced into small pieces</li>
<li class="ingredient">1 small onion, peeled and chopped</li>
<li class="ingredient">2 cloves garlic, minced</li>
<li class="ingredient">2 (15-ounce) cans diced tomatoes</li>
<li class="ingredient">1 tablespoon chicken base (I didn't have this so just used a little chicken stock)</li>
<li class="ingredient">1 tablespoon sugar</li>
<li class="ingredient">2 cups fresh okra, cut into 1-inch pieces (may use frozen, if fresh not available)</li>
<li class="ingredient">Fresh ground black pepper</li>
</ul>
<h2 style="color: #553c13; font-family: 'Comic Sans MS'; text-align: left;">
Directions</h2>
<div class="instructions" style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
Cook bacon slightly. Saute onion and garlic with bacon until tender. Add tomatoes, chicken base, sugar and pepper. Stir well and let simmer for about 20 minutes. Adjust seasoning if needed. Meanwhile wash okra and remove fuzz if using fresh and cut into pieces. Add the okra and simmer until okra is done, about 20 more minutes (less if using frozen okra.)</div>

<ul style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
<li>1 (8 ounce) package cream cheese, softened</li>
<li>1/2 cup butter, softened</li>
<li>3/4 cup confectioners' sugar</li>
<li>2 tablespoons brown sugar</li>
<li>1/4 teaspoon vanilla extract</li>
<li>3/4 cup miniature semisweet chocolate chips</li>
<li>3/4 cup finely chopped pecans</li>

<span style="font-size: 21px;">DIRECTIONS</span></h2>
<ol style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
<li>In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners' sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours.</li>
<li>Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour.</li>
<li>Roll the cheese ball in finely chopped pecans before serving. But it can be hard to form a ball so I skipped the nuts and just put the mixture in a bowl. (I think it's better that way!)</li>

It's really kind of like a milkshake. I'm sure at some point - I had an exact recipe but I don't like to follow recipes so feel free to adjust the measurements to your liking.</span><br style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;" /><br />
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: center;">
You take one box of vanilla ice cream and one box of chocolate ice cream and put in punch bowl</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhSFcZ5Pr_IapNmWZY9Zk510fhvNp05WIAaFV4Duy_8BS49Ot8MEzTsZTY7Xj_nK4yLsV_X1oUsMET1yRBtkl_uJJ0Mpxtb4Z_tLXTTwBCUE43MzOya29lvCc1ht4vtdDbNQZO0nPW4U3c/s1600-h/IMG_5443.JPG" style="color: #9aad36; text-decoration: none;"><img alt="" border="0" id="BLOGGER_PHOTO_ID_5141457396760649442" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhSFcZ5Pr_IapNmWZY9Zk510fhvNp05WIAaFV4Duy_8BS49Ot8MEzTsZTY7Xj_nK4yLsV_X1oUsMET1yRBtkl_uJJ0Mpxtb4Z_tLXTTwBCUE43MzOya29lvCc1ht4vtdDbNQZO0nPW4U3c/s400/IMG_5443.JPG" style="border-width: 0px; cursor: pointer; display: block; margin: 0px auto 10px;" /></a>And then you add a little coffee. If you like coffee - you may add one or two cups. If you only like a small hint of coffee - just add a little bit.</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: center;">

I did use skim milk - so it's a healthy low fat drink. :-)</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgSGDRITxCDCdgVD8sP2ZDZvyiJZZw9HEdnP4C-bd2REXGRyYLTCRkI5qLdq7hdxp3ODFWwBoiXjA14ruFyb471OZ7iJYeHbBd1XJbdkiTnBDJuLwUsn2GgJok9FSnl4aFeYb-G0gy4COQ/s1600-h/IMG_5446.JPG" style="color: #9aad36; text-decoration: none;"><img alt="" border="0" id="BLOGGER_PHOTO_ID_5141457401055616770" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgSGDRITxCDCdgVD8sP2ZDZvyiJZZw9HEdnP4C-bd2REXGRyYLTCRkI5qLdq7hdxp3ODFWwBoiXjA14ruFyb471OZ7iJYeHbBd1XJbdkiTnBDJuLwUsn2GgJok9FSnl4aFeYb-G0gy4COQ/s400/IMG_5446.JPG" style="border-width: 0px; cursor: pointer; display: block; margin: 0px auto 10px;" /></a>Then the best part - hershey's syrup. This gives it the flavor - I put in a whole bottle.</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: center;">

<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: center;">
<div style="text-align: left;">
This is super easy and you can make it any kind of variety you like. I've seen yellow cake and chocolate icing and chocolate and chocolate. But being the good Southern girl I am - I LOVE red velvet cake so I thought this would be good. (Jamie - you would LOVE these!)<br /></div>

<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
2 large yellow onions<br />4 tablespoons unsalted butter<br />1/4 cup vegetable oil<br />1/4 teaspoon ground cayenne pepper<br />1 teaspoon kosher salt<br />1/2 teaspoon freshly ground black pepper<br />1 teaspoon Dijon mustard<br />1 teaspoon balsamic vinegar<br />4 ounces cream cheese, room temperature<br />1/2 cup sour cream<br />1/2 cup mayonnaise</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
METHOD<br />Cut the onions in half and then slice them into 1/8-inch-thick half-rounds. (Yielding about 3 cups of onions)</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
Heat the oil and the butter in a large sauté pan over medium high heat (it works better to NOT use a non-stick pan). Add the onions, cayenne, salt and pepper and sauté for 10 minutes. Reduce the heat to medium low and continue to cook for 40 more minutes, stirring occasionally (but not too often-the onions should start to stick to the pan) until the onions are browned and caramelized.</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
<a href="http://wellfed.typepad.com/.shared/image.html?/photos/uncategorized/100_1136.JPG" style="color: #9aad36; text-decoration: none;"><img alt="100_1136" border="0" height="308" src="http://wellfed.typepad.com/well_fed/images/100_1136.JPG" style="border-width: 0px;" title="100_1136" width="408" /></a></div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
Add the Dijon mustard and balsamic vinegar and continue to cook for about 10 more minutes. Allow the onions to cool.</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
<a href="http://wellfed.typepad.com/.shared/image.html?/photos/uncategorized/100_1141.JPG" style="color: #d2df51;"><img alt="100_1141" border="0" height="308" src="http://wellfed.typepad.com/well_fed/images/100_1141.JPG" style="border-width: 0px;" title="100_1141" width="408" /></a></div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
This is what you want the onions to look like. Note that they are really dark because of the balsamic vinegar.</div>
<div style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">
In a large bowl combine the cream cheese, sour cream and the mayonnaise. Whisk until smooth. Add all of the onions, reserving about a tablespoon for garnish, into the cream cheese mixture. Stir to combine and mix well. Transfer to a serving dish and top with reserved onions. Refrigerate overnight to allow flavors to combine. Serve at room temperature with potato chips.</div>

Remove pork tenderloin from marinade and pat dry. Brush olive oil onto grill and over meat for extra flavor. Reserve marinade. Grill tenderloin until cooked through, about 30 minutes to 40 minutes over medium heat. Or roast in oven for 35 to 45 minutes. Allow meat to rest about 10 minutes before cutting into 2-inch serving pieces.<br />
While meat is grilling, bring reserved marinade to a boil in a small saucepan, then lower the heat and gently simmer until it is reduced to about 2 tablespoons. Stir occasionally. Drizzle a small amount of marinade over each piece of meat.</span><br style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;" /><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjMiDF1HYZ1GVpwuZQTdfCoW9zkhy3JSKGr55uv02uFrWD7b97i96MZPJ5sjFv4DwF2Uka-KfRt6vR2dFICPwXv22SuJHP0RnPjsuNXblY-voDqa2FDgDM98P0RzOnoA2zuT53IZq6dyLE/s1600-h/pork+loin+011.JPG" style="color: #9aad36; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left; text-decoration: none;"><img alt="" border="0" height="300" id="BLOGGER_PHOTO_ID_5176644961136101426" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjMiDF1HYZ1GVpwuZQTdfCoW9zkhy3JSKGr55uv02uFrWD7b97i96MZPJ5sjFv4DwF2Uka-KfRt6vR2dFICPwXv22SuJHP0RnPjsuNXblY-voDqa2FDgDM98P0RzOnoA2zuT53IZq6dyLE/s400/pork+loin+011.JPG" style="border-width: 0px; display: block; margin: 0px auto 10px; text-align: center;" width="400" /></a><span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">The meat always stays so tender! <span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">2 16 oz cans of ranch style beans (I only used one can because I'm not a bean lover & it was fine)</span><br />
<span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">* Maybe not everywhere but I know here - you find cans at the grocery store of ranch style beans. If you don't have those - substitute pinto or black or whatever you like. </span><br />
<span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">3 cans of diced tomatos (maybe substitute 1 can rotel if you like spicy) (I got the garlic/onion kind and I think it gave it great flavor)</span><br />
<span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">1 pkg taco seasoning</span><br />
<span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">1 pkg Hidden Valley dressing mix</span><br />

<span style="color: #553c13; font-family: 'Comic Sans MS'; font-size: 14px; text-align: left;">Brown and drain meat. Saute onions for a few minutes. Combine all ingredients in a large pot. Add chili powder, salt and pepper to taste. Simmer 1-2 hours. I topped it with shredded cheese!</span>Kelly’s Kornerhttp://www.blogger.com/profile/05912946906871580823noreply@blogger.com2tag:blogger.com,1999:blog-1316106941946518923.post-37762175266248617882013-05-15T08:28:00.003-07:002013-05-15T08:29:08.512-07:00My Mam-ma's Chocolate Pie <div class="separator" style="clear: both; text-align: center;">

<span style="color: #553c13;">My sweet mam-ma made the BEST chocolate pie. We used to request it at every holiday dinner or family gathering and it was a fight to see who could eat the most. I have never tried to make it until this weekend. It tasted good but I have a long way to go on being able to make a good meringue. I don't know what the secret it is but I hope one day I can get mine to fluff up like hers always did.</span><br />
<br style="color: #553c13;" />
<span style="color: #553c13;">Ingredients:</span><br />
<span style="color: #553c13;">Pie filling: </span><br />
<span style="color: #553c13;">Frozen or refrigerated pie crust</span><br />
<span style="color: #553c13;">1 3/4 cup sugar</span><br />
<span style="color: #553c13;">3 tbsp cornstarch</span><br />
<span style="color: #553c13;">3-4 tbsp cocoa</span><br />
<span style="color: #553c13;">1 1/2 cups milk</span><br />
<span style="color: #553c13;">4 egg yolks</span><br />
<span style="color: #553c13;">1 tbsp vanilla</span><br />
<span style="color: #553c13;">2 tbsp butter</span><br />
<br style="color: #553c13;" />
<span style="color: #553c13;">Meringue:</span><br />
<span style="color: #553c13;">4 egg whites</span><br />
<span style="color: #553c13;">1/2 cup sugar</span><br />
<span style="color: #553c13;">6-8 large marshmallows</span><br />
<br style="color: #553c13;" />
<span style="color: #553c13;">Bake pie crust according to directions. Mix first 3 ingredients. Beat 4 egg yolks and save the whites. Sprinkle salt on eggs. Add milk in eggs. Add to dry and cook on stove top - stir until thick. Add vanilla and butter.</span><br />
<span style="color: #553c13;">Pour in pie crust when done.</span><br />
<div class="separator" style="clear: both; color: #553c13; text-align: center;">
<br /></div>
<span style="color: #553c13;">Take egg whites and beat until stiff. Take sugar and a "tad" of water and boil until it makes a syrup. Add marshmallows and melt. Add to egg whites already beat. Add on top of pie.</span></div>

He used corn tortillas and I think fried them in oil (maybe?) but I'm going the easy route and just doing flour. (I was making two pans so I have more ingredients up here than you need!)<br />
<br />
<div style="font-weight: bold; text-align: center;">
Beef Enchiladas<br />
<br />
<span style="font-weight: normal;">1 lb hamburger meat</span><br />
<span style="font-weight: normal;">1 small onion, chopped</span><br />
<span style="font-weight: normal;">1 can of chopped black olives</span><br />
<span style="font-weight: normal;">1 can of cream of mushroom soup</span><br />
<span style="font-weight: normal;">1 can of Enchilada sauce</span><br />
<span style="font-weight: normal;">8 oz of shredded cheddar cheese</span><br />
<span style="font-weight: normal;">6-8 flour tortillas</span><br />
<br />
<span style="font-weight: normal;">Brown the meat and saute the onions in with it. Season with salt to taste. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and heat on low in a sauce pan and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.</span></div>

I love shrimp and this sounded pretty good.<br />
<br />
AND it did NOT disappoint.<br />
<br />
This was SOOOOO good. And the great thing is - it probably took 30 minutes from start to finish. A lot of soups need to simmer for a few hours. This you can make on the fly quickly. <br />
<br />
Ingredients:<br />
5 cups chicken broth<br />
3 cups tortilla chips<br />
1 lb medium fresh shrimp (peeled and tails removed)<br />
2 4.5 oz cans green chiles, undrained<br />
1 10 oz can diced tomatos, undrained<br />
2 tbls butter<br />
1 medium onion, chopped<br />
2 cloves garlic, minced<br />
1 cup sour cream<br />
1/4 cup chopped fresh cilantro<br />
Shredded cheddar and mozerella cheese<br />
<br />
Bring chicken broth to a boil in a large dutch oven.<br />
Add chips. Leave them in boil for about 4 minutes and then remove from heat. Stir in Green chiles and tomatos.<br />
<br />
Melt butter in a skillet over medium high heat. Add shrimp, onion and garlic. Cook, stirring constantly, 4-5 minutes until shrimp is pink.<br />
<br />
Stir shrimp mixture into broth mixture. Cook over medium heat until thoroughly heated (do not boil). <br />
<br />
Stir in sour cream and cilantro. Serve immediately. Top with cheese and I also added avocado.Kelly’s Kornerhttp://www.blogger.com/profile/05912946906871580823noreply@blogger.com3
